Organic ready meals
It’s convenient to buy chilled and frozen ready meals, and the variety gets more sophisticated by the minute. But very few deliver their promise. They never look like they do on the pack when you dish them up, and there’s always that problem with quantities : one portion is never enough ; two is too gross. Most vegetarian ready meals, including the ‘healthy’ type of ranges are usually high in salt, and ‘fat free’ doesn’t mean low in calories. Extra sugars, refined carbohydrates and thickeners are often added to boost the flavor and texture, s calorie content may be only slightly less than, or similar to, that of standard products. A claim that food is 85 percent fat – free means that it still contains 15 percent fat – so it’s not low cal at all. The answer is to make your own. ‘ I haven’t got the time and she’s got a deli, so she must love cooking’, I hear you mutter. Well I don’t. I love squeezing, buying, selling, talking, and eating food but I enjoy cooking about as much as I enjoy exercise – which is not a lot. But what I’m going to suggest is so easy, you can’t not do it. All you need is to put aside one day a month., find yourself a large casserole or pan, and get a stock of one person’ foil takeaway containers from your local supermarket in the vegetarian ready meals. When I was on the permanent trade mill of the international modeling circuit for ten years and working between Paris, New York, Milan and London. I used to ‘one – pot’ once a month at my home in each city and I can honestly say that say that it changed my life. It gives complete freedom from the hassle of regular shopping. The beauty of the one- pot meal is that all the vitamins and minerals are retained in the sauce, and they’re a doddle to make. They contain no additives whatsoever, and quick frozen food loses none of its nutrients through the freezing process. You’ll also save a fortune – the supermodels versions, quid pro quo, are outrageously expensive. Think of your favorite one – pot meals that are filling without being fattening. I don’t know what you like, but it could be, say, Spring Lamb Stew with baby carrots, small new potatoes, green beans, peas, tomatoes and fresh herbs. Or may be a vegetarian Black – eyed bean and Squash Stew or Red Thai Chicken Curry with Sweat Peppers and Bamboo Shoots, or a Spicy Mexican Chilli. The trick is to make meals with not much peeling and chopping involved ( a food processor helps chop large quantities of onion and other ingredients quickly ), so you can throw it all into the casserole or pan and walk away while it cooks. One cooking session, making four different dishes, each with recipes for eight people( most recipes are for four, so just double everything ), will give you enough meals for a moth of freeze. When the cooked contents of the casserole are cooled, decant them into the foil takeaway containers, scribble the initials of what’s inside on the lid and freeze them. Then simply choose from one of your own ’prepared’ meals whenever you’re at home. Heat up the container, un covered, in the oven preheated to 180 degree C / 350 degree F / gas4, for45 minutes, and enjoy a complete meal with no fuss, no additives and no washing – up. You can keep tabs on precisely what you’re eating and you can knock up a salad or an additional vegetable while the pot meal is reheating. We sell heaps of these meals every week at my deli.
