Season's Best Pasta Recipes - Pasta salad, Penne with Caponata Sauce & Baked Ziti with Four Cheeses
Pasta Salad (Serves 10)
Ingredients
2 cups snow peas
½ lb fresh mushrooms, cut in half
1 bunch broccoli, flowerets only
1 cup cherry tomatoes, cut in half
1 (12-oz) package tri-colored pasta shells
1 red bell pepper, cut into strips
1 (6-oz) package tri-colored stuffed tortellini
1/3 cup grated Romano cheese
Directions: Cook the snow peas as well as broccoli in a microwave till it becomes crisp & tender. Drain it and set aside.
Cook the pasta shells and the tortellini as per directions on the package while omitting all salt and oil. Drain and set it aside. Combine all the ingredients in a large bowl.
Combine all the dressing ingredients together, while mixing well.
Pour over the pasta salad. Toss it well & Refrigerate.

Penne with Caponata Sauce (Serves 4)
Ingredients 2 tablespoons extra-virgin olive oil (the fruitiest you can find)
¼ cup chicken broth or water
2 medium-size scallions, trimmed and thinly sliced (including some of the green tops)
¼ cup coarsely chopped fresh basil
1 ½ cups frozen bell pepper stir-fry mix (red, green, and yellow peppers; do not thaw)
2 tablespoons coarsely chopped Italian (flat leaf) parsley
2 large garlic cloves, thinly sliced
Salt and freshly ground black pepper
Two 7 ¾-ounce cans caponata, with their liquid
1/3 cup freshly grated Parmesan cheese
½ pound penne or fusilli, cooked al dente by package directions and drained.
Directions: Heat the oil in large, skillet over moderate-high heat for about 2 minutes. Add the stir-fry mix, scallions, & garlic. Rreduce the heat to moderate and then cook, while stirring, till scallions go limp and pepper juices in excess evaporate, for 3-5 minutes.
Add the caponata & the broth, & simmer while uncovered, stirring often, till just until the flavors mingle, for about 5 minutes.
Mix in the basil, salt, pepper, & parsley. Add the penne and then toss lightly for coating with sauce. Sprinkle grated cheese,
Prepare Penne with Caponata Sauce and serve with grated Parmesan.

Baked Ziti with Four Cheeses ( Serves 10)
Ingredients 1 lb ziti, uncooked
4 ounces Parmesan cheese, grated
1 32 oz jar pasta sauce
8 ounces part skim Mozzarella cheese
1 cup low fat cottage cheese
4 ounces Provolone cheese, cut in quarters
3/4 cup parsley, chopped
Directions: Cook the pasta as per to the package directions and then drain.
Coat baking dish with cooking spray; & set aside.
Place thin layer of sauce at the bottom of prepared dish.
Continue to make layers of pasta, parsley, cottage cheese, pasta, sauce, Parmesan cheese, mozzarella, pasta, pasta, parsley, sauce & parsley.
Sprinkle the provolone on top.
Cover and then bake in 375º Fahrenheit oven for 30 minutes or till the cheese melts.
