South Indian Receipe- Curd Rice Recipe-Curd Rice preparation -Always garnish your food well. Not only does it add to flavour and nutritional value, a beautiful garnish transforms a simple dish south indian receipe to an exotic one.
Curd Rice preparation - 2 cups slightly overcooked rice.
1 cup thick, fresh curd.
1 tbsp sugar or to taste.
Salt to taste, finely chopped
Green chilli to taste (optional).
1 sprig curry leaf.
½ tsp grated lime juice.
½ tsp grated lime rind.
Garnishings: Finely chopped cucumber, grated carrot, chopped fresh coriander,
Fresh pomegranate seeds.

Mash the rice a little while still hot. Add curd, sugar, salt,
green chilli (optional), curry leaves,
lime juice and rind, mix well.
Let cool to room temperature.
Place the rice on a round plate.
Garnish with cucumber, carrot, coriander and pomegranate.
Makes a complete meal served with a pickle and roasted papad.
