To garnish : peanuts and tomato slices.
Mix chicken nuggets, soyapean sauce, pineapple juice,
Vinegar, salt, pepper and ginger in a saucepan.v Cook over low heat for 15-20 minutes orv Until the chicken is tender.
Once the chicken is done, add the capsicum and cook for 7
Minutes. Add the cornflour mixture and stir constantly till thick.
Stir in the pineapple and cooked rice. Mix well. Serve hot.
Variation : A handful of small prawns can be added or use fish
Nuggets instead of chicken or omit the chicken altogether and use
Paneer for a vegetarian version.
